Tasty and Easy Recipe for Using Homegrown Cauliflower

My garden was quite good this year, with enough rainfall to have nice tomatoes, peppers, eggplant, squash, beans, peas, corn, lettuce, carrots, beets, and onions. Now I’m harvesting cauliflower, and it’s hard to use it all up. It is a wonderful new type of cauliflower called Cheddar Cauliflower, and is very easy to grow. There is no need to tie the leaves, you can just let it grow. I have a great recipe to try if you like Boiled Dinner. I have always made it with cabbage, carrots, potatoes, onion, and sausage/ham/whatever meat you like, but the cabbage left a lingering aroma in my kitchen. Try this recipe instead.
1 cauliflower, cut up into flowerettes
3 carrots, peeled and cut into 1 inch slices
3 potatoes, peeled and cut into quarters ( or use whole small redskins)
1 lb smoked sausage/kielbasa
2 T margarine
1 bay leaf
1 t parsley or dill
pepper
1/2 C water, salted

Boil water, add potatoes, carrots, seasonings. When they are halfway cooked, add the sausage, cauliflower, and margarine. Cook until as soft as you prefer. Serve hot.

This is also good without the sausage (for you vegetarians).
